Recipe: Healthy, Quick and Cheap Cannellini and Chorizo Bean Stew

This is another recipe inspired by Deliciously Ella!

It is a really hearty filling stew which is surprisingly good for you. Plus it takes less than five minutes to make and is a pretty thrifty dinner option!

If you are a vegan/vegetarian to serve 2 people you need:


1 tin cannelini beans
1 tin chopped tomatoes
Half a jar of sundried tomatoes
1 tbsp tahini
A sprinkling of Chilli flakes
1 clove garlic (I get mine pre-chopped in a tube)
Salt and Pepper

If you like a bit of meat...

Add Chorizo! As much or as little as you want



The great thing is, once you have the tahini, garlic and chilli in your cupboard/fridge this is SUCH a cheap meal to make.

£1.62 per serving...with ingredients from Waitrose, so could be even cheaper from Tesco

Cannelini Beans are 45p a tin, Chopped tomatoes are 50p a tin, Sundried tomatoes are £2 per jar and Chorizo is £1.30 for a chopped up packet

Start by frying your chorizo in a saucepan

The oil will start to come out of the chorizo and it will all sizzle away and make your kitchen smell yummmyyyy




Next drain your beans into a colander or sieve and rinse with water

Then add them to the chorizo and give it a good mix..



Add your sundried tomatoes. Mine were actually bigger than expected so next time I think I will chop them up into strips!



Add your chopped tomatoes and stir again...



Add a tbsp of tahini



As much or as little chilli as you want (I like a little)
Plus about a clove of garlic (crushed) or a little squeeze of your garlic tube!

[Now an amendment...I've thought about this...and next time I make it I'm going to fry the garlic and chilli with the chorizo rather than add it at the end... I don't know why I didn't before and it tasted really good, but I think it will taste even nicer with those ingredients fried.]

Then stir in and add salt and pepper



Let it warm up for a minute or two



And that's how easy it is!



Dinner for two, cheap as chips (even cheaper actually) and delicious.

Its filling because of the beans and packed full of protein

Great if you are on a diet

And if you aren't add a chunk of warm bread on the side for dipping!
