Recipe: Healthy and Easy Banana Pancakes

Sometimes on a weekend morning you just fancy brunch food for your breakfast rather than a green nutribullet.

However, you don't want to be naughtyyyyy 

Here is the perfect solution!


Healthy Banana Pancakes!

(high fiveeee)

All you need to make a generous portion for one, or a less generous portion for two
(it makes about 9 small pancakes)
Is:


Two eggs
Two small bananas or one big one
Two tsps of peanut butter
Two tsps of chia seeds (optional)

I add the chia seeds to add protein, but you can leave them out if you want or replace them with flaxseed

Break your bananas into pieces and place into your nutribullet with your chia seeds 
If you don't have a nutribullet just mash with a fork

Add in your peanut butter....or nutella if you want chocolate ones!

And mix again.

You want to put the PB in before the eggs or it will curdle...

When you PB is mixed in add your eggs... 

And mix again 

It should be of the consistency where if you spoon it out into a pan it will make a scotch pancake not a crepe...so more like the texture of tahini than single cream?

God what a middle class description! 

Add a little oil to a non stick pan - I use coconut oil, because I use it for everythinnggggg.

And spoon in your mixture. Mine were about the size of a coffee cup base


When they start to get little bubbles on top (just before they get to the point in the picture below actually!) flip them over 


Cook for another minute on the other side (not too high a heat!)
And place to one side whilst you make more...

Arrange on a plate, sprinkle with granola, some maple syrup and a bit extra peanut butter if you are me...


Or some fat free yoghurt and granola if you are in a super healthy mood


And you have a delicioussss healthy brunch!
