Recipe - Hummus and Paprika Crusted Chicken

On Tuesday night my best friend Katie came over for dinner and I decided to try out a new recipe.

Katie and I have know each other since the day I was born, her Mummy is my Godmother and my Mummy is technically we are Godsisters!

Anyway enough of a trip down memory lane...the recipe!

"Hummus and Paprika Crusted Chicken"

You need:

Two chicken breasts
Half a pot of hummus
A lemon
A sweet potato
A courgette
Half a yellow pepper
Two large mushrooms
A handful of cherry tomatoes
Olive Oil

First preheat your oven to 180'C.

Second, chop up your peeled sweet potato, pepper, mushrooms and courgette into batons. Pop them in a roasting dish (but keep the mushrooms aside) and drizzle with olive oil and grind on some salt and pepper.

In a separate dish put your two chicken breasts. Dry them off with some kitchen roll...

Then grind on some salt and pepper.

Put about two tablespoons of hummus on each one and spread it over. Don't even think about putting the spoon back in the tub or you will probably get a bit ill.... I therefore put two big blobs of hummus on each breast (waheyyy) and then spread it out afterwards.

Sprinkle with paprika...

Then squeeze over the juice of half a small lemon (a quarter of a lemon if its a big one)

Pop both trays in the oven and set your timer for 15 minutes.

Whilst you wait have a large glass of wine with your bestie...

After 15 minutes add in your chopped mushrooms and cherry tomatoes (they need less cooking time) to the roast vegetable tray.

Set the time for another 15 minutes and wait.....then - voila.

You, my friend, have dinner for two in half an hour with only 5 minutes prep time. And it is GOOD. The hummus forms a crust but is still soft underneath. I would never have thought of cooking hummus before but I'm really glad I did. I liked it so much I even made it for my lunch yesterday with the spare chicken breast and the left over hummus!
